Weekends should be at least 3 days long, especially summer weekends. There is never enough time for everything I would like to do. Sleep, relax, clean, do laundry, create, cook, eat, socialize ;)

SMALL GREEN PUMPKINS STUFFED WITH SOY FLAKES
You will need:
- small green pumpkins
- soy flakes
- vegetable broth
- cherry tomatoes
- tomato paste
- soft processed cheese
- parmesan cheese
- olive oil
- onion
- garlic
- salt
- pepper
- thyme
Preheat the oven to 200 C.
First - wash the pumpkins, cut off the tops and scoop out each pumpkin with a spoon. Chop the seeds for the stuffing, cut the cherry tomatoes, cut the cheese, grate the parmesan cheese. Soak soy flakes in warm vegetable broth.
Second - chop the onion (for two small pumpkins I used one half of onion) and garlic (I used 2 cloves). Heat the oil and add onion, garlic and the stir in the pumpkin seeds and cherry tomatoes. Add some salt and pepper. Stir and after a few minutes add soy flakes (that you soaked in the vegetable broth) and stir in some tomato paste. Lower the temperature, cover and let it cook for another 10 minutes. Add fresh thyme and small pieces of cheese.
Third - stuff the pumpkins with the stuffing and cover with grated parmesan cheese. Drizzle with a few drops of olive oil.
Fourth - put the pumpkins into the baking tray and cover with tin foil. Bake for around 30 minutes, then uncover and use the grill function in your oven for another 15 minutes or so.

The pumpkins are great the next day also :) The last time I made them, I prepared them on Sunday and we ate them on Monday. Husband ate them for lunch and called me to work... he said they were one of the best meals he ate.
